Is there any way to mount the ephemeral storage someplace other than /mnt?

one ephemeral storage disk is always mounted under /mnt.
Some instance types (the larger ones) have more than one ephemeral storage disk. You can mount those anywhere you like, either doing so manually or with a chef recipe on setup (recommended).
